Anglo-Saxon
Honey Cake
Ingredients:*
Cake
6oz honey
5oz butter
3oz soft brown sugar
1tablespoon water
2 large eggs
7oz Self-raising flour
Topping
2oz icing sugar
1tablespoon honey
2 teaspoons water
Method:
Put honey, butter, sugar and water into a pan.
Heat gently until melted - remove from heat.
Cool slightly.
Add beaten eggs and flour and mix thoroughly.
Spoon into a lined 2lb loaf tin or 7inch cake tin
Cook at 180° gas mark 4 for 45 mins
Test with a wooden skewer.
Cool slightly before turning out onto rack
For topping:
Mix together icing sugar, honey and water to form a smooth paste.
Trickle over cake.
Freezes well
